Stealing
Stealing is tried on one thing you can see in a pack you have opened with Snooping. A dice roll decides it, and what you lift goes into your backpack, where it cannot be moved for two minutes: long enough for its owner to kill you and take it back. From a stack you only ever come away with part of it. Blessed and bound items cannot be stolen, and neither can a whole bag. Landed or not, the attempt makes you a criminal: your name turns grey, anyone may attack you, and you cannot leave the town for two minutes. A guard within ten tiles has you arrested on the spot, and anything you had lifted is returned to its owner's bank.

One look, one attempt. Whatever comes of it, the pack closes and you must snoop again before you can try for anything else.
Practising on a Pickpocket Dip marks you a criminal while you keep at it and for two minutes after. A town's guards arrest criminals on sight, so practise at home.
